Project 003 – Imperial Saison Red Currant
Saison, meaning ‘season’ in French, was originally brewed by farmers in the French-speaking parts of Belgium. Brewers of this beer used raw materials that were available at the particular time of season, meaning that the character of the beer would vary from farm to farm and from month to month. Our tribute to this seasonal brew uses redcurrant juice and a special yeast that produces a lot of dry flavor and high carbonation. This dryness, together with the taste of the redcurrants, gives the beer a lightly vinous tone.

Brewmaster Daniel’s Comment
– I thought a long time between using blackberries or redcurrants… but the delicate acidity of the redcurrants became a crucial component of our Saison. It is also an extra bonus that they grow so prolifically in the woods around our brewery!
